Chilled Chinese Noodle Salad INGREDIENTS: □ 8 oz. Whole Wheat Spaghetti □ 4 oz. Shredded carrot □ 6 oz. Snap peas □ 12 oz. Broccoli Slaw □ 2 Tbs. Low Sodium Soy Sauce □ 1 Tbs. Sriracha or hot sauce □ 2 Tbs. Rice Wine Vinegar □ 2 Tbs. Extra Virgin Olive Oil □ 2 tsp. Sesame Oil □ 2 oz. Crushed Peanuts, optional □ 2 Tbs. Chopped Cilantro, optional

DIRECTIONS:

1. Cook spaghetti according to directions on box. After draining, rinse under cool water. 2. In a large bowl, add all listed ingredients. Stir to combine. 3. Place salad in refrigerator and allow it to chill for 20 minutes. 4. Top with peanuts and cilantro prior to serving.
