Phone Numbers and Addresses At least once every day, our office staff is asked by a student for his/her phone number. While it may sound elementary, there are many Mountain Pine High School students who do not know a parent’s phone number or their address. It is critical that all of our students know a contact number so that if there was an emergency we can easily get a hold of parents/guardians without logging into to Eschool. In addition, please make sure that if your address or phone number changes that you put your new information on file with the office—a simple phone call or email would be perfect. It can be incredibly scary for our staff when a student has a medical emergency and we are unable to contact a parent.

Red Devils Recipe of the Month Chili Relleno Casserole Ingredients: 2 (7ounce cans) whole green chilies, drained

1 pound shredded Cheddar Cheese 4 eggs 2 tablespoons all-purpose flour 1 1/2 (5 ounce) cans evaporated milk 1 pound Monterey Jack Cheese 2 (10 ounce) cans green enchilada sauce Directions: Preheat oven to 400 degrees, grease a 9x13 pan. Split chilies open and spread half the chilies on the bottom of the prepared baking dish. Layer the cheddar cheese and top with the rest of the canned chilies. Whisk together the eggs, flour and evaporated milk in a bowl. Pour the mixture over the chilies and cheese. Bake in the preheated oven until set about 30 minutes; remove casserole and top with Monterey Jack Cheese. Pour the Green chili salsa over the top; return to the oven and bake until the cheese is melted another 15 minutes. Serve with a tossed green salad for dinner and cut up fresh fruit.
