2009 Votre Santé Pinot Noir
California wines with a French accent PAYING HOMAGE TO CLASSIC FRENCH VARIETALS Votre Santé wines pay tribute to Francis Coppola’s paternal grandmother, Maria Zasa, who would toast with the traditional French phrase, ‘à votre santé,’ each time she raised her glass. In her honor, we created a Chardonnay and Pinot Noir, France’s two classic Burgundian varietals, in a delicate style that makes them perfect pleasures you can enjoy on any occasion. THE WINE We source our fruit from several different cool climate appellations, rather than just one, in order to achieve more complex flavors, textures, and dimension. Because each region reflects distinct soil qualities, each source develops unique fruit flavors and aromatic properties. Whether it’s bright, red cherry flavors from Sonoma Coast, earthy undertones from Carneros, or spicy, mineral accents from Monterey, each appellation contributes its own signature flavor. We pick the fruit at a lower Brix level so we can retain the its natural acidity and derive a moderate alcohol content. This helps us produce a style of Pinot Noir more similar to a French wine than the riper, full-bodied renditions typically seen in California. Once harvested, the grapes are cold-soaked and fermented at a cool temperature for about a week. Then, a combination of new and 1-year-old French oak barrels are used for aging, with a small portion of the wine placed in spicier Hungarian oak barrels to impart a subtle woodsy character. FLAVOR PROFILE Our 2009 Votre Santé Pinot Noir offers a light, elegant texture, which is perfect for pairing with food. Intriguing aromatics reminiscent of incense, cinnamon and tea leaves are followed by bright, lively flavors of red cherries, raspberries, cranberries, earthy minerals and cloves. The wine is vibrant and well-balanced, with a lengthy, flavorful finish.
