Varietal Sauvignon Blanc Vineyard Region New South Wales, Australia Vinification and maturation Harvested in the cool of the night to retain the gentle aromatics of the variety, the fruit was carefully crushed to press with the free run juice quickly fined and then racked into stainless steel tanks for fermentation. The wine was matured on yeast lees for six to eight weeks to enhance the natural fruit flavours and contribute richness across the mid palate. The resulting wine was blended and refined before bottling. Colour Light pale straw. Aroma Hints of fresh snow pea and herbs, combined beautifully with intense passionfruit and citrus flavours. Palate A dry and fresh style showing intense passionfruit and exotic tropical fruit flavours. Lively acidity is balanced well by a light sweetness, providing fantastic weight and length to this exceptionally structured wine. Alcohol: 12.5%
