Vintage: 2016 Grape Varietal: Shiraz Vineyard Region: New South Wales. Australia. Vintage Conditions: The spring of 2015 was mostly dry and slightly cooler than average with just enough rain to freshen up the vines and keep them ticking along nicely into a cooler 2016 that allowed for even ripening across all varieties. This allows winemakers to pick fruit at it optimum ripeness and flavour level. The Shiraz was harvested in early March. Colour: Vibrant rouge with red hues. Aroma: Aromas of plum, blackberries and dark cherry fruit dominate the nose with hints of black pepper, spice and sweet toasty oak with hints of vanilla notes add complexity. Palate: Soft and full bodied, flavours of dark red fruit like black berry and cherry are supported by subtle fine tannins and toasty oak provides excellent length to the palate, balancing the wine out perfectly. Vinification and Maturation: Fermented on skins in stainless steel fermenters for 5-6 days to allow for full colour and tannin extraction. The must was then pressed off and racked into American oak to enhance richness and complexity for 9 months. Selected parcels of Shiraz were blend together to get balance and length in the wine before bottling. Alcohol: 13.5 %
