Apple Flapjack (Makes 24)

Ingredients 1lb 8 oz Oats 4 oz Demerara Sugar 8 oz Golden Syrup 12 oz All Purpose Margarine 8 oz Cooking Apples

Method        

Peel and gently stew the apples. Melt the margarine Place the oats, sugar, margarine and syrup into a mixing bowl and mix well. Add the stewed apples and mix. Empty into a lightly greased tart tin and spread evenly. Rough up the top with a fork. Cook for approximately 30 minutes. Allow to cool slightly and cut into 24 on the diagonal and put on a cooling rack. The flapjacks will still be a bit squishly when they come out of the oven - Do not overcook or they will go very hard when they cool.
