Background on Bordeaux Classics
Bordeaux wines (Clarets) are highly regarded by many wine lovers and connoisseurs as a quality benchmark for wines made from the Cabernet and Merlot blend. Wines from both Left Bank of Gironde and Right bank of Garonne are not just well-‐demanded, they also stand the test of time, and continue to impress not only with their ability to evolve decades (and sometimes centuries) later, Clarets are also known to be an intellectually-‐engaging wines. We have meticulously selected wines from Chateaux that not only match the expectation of our customers; they are also showing its prime at this stage of their evolvement, notably wines from selected 80s and 90s vintages.
Tips for enjoying our Bordeaux wine selections: 1982 – Clarets from this monumental vintage have been attractive since young. It has since matured and become fresher and richer than its teenage years; exhibiting lovely and vigorous fruits. A matured Bordeaux vintage that will provide great pleasures 1986 – A vintage that stands in direct contrast when compare to the softer and fruit-‐charming 1985 that displays immediate appeal during its youth. ’86 Clarets tends to be more structured and firmer in its taste, with assertiveness on the palate. Typically a food wine that will complement meats and braised flavoured dishes. 1989 – A special vintage for most Bordelaise as vintners started to harvest based on phenolic ripeness rather than sugar level. A vintage that is not short on fruit ripeness with unyielding tannins; nevertheless, over years of maturing, the wines can now be drunk with pleasures, even with some displaying chewy texture; while others exhibited dense flavours, complexity and multi-‐dimension in its offering. 1990 – Although this vintage is known for its’ en-‐primeur’ performance, Clarets from 1990 proves to be a special breed with fruit charm yet continue to amaze with its freshness; it is such a delight right now to open a bottle to share with fellow connoisseurs or with love ones. 1995 – To the Bordeaux vignerons, this vintage is a saviour, since consecutively from 1991 to 1994, the harvest were less than positive. Nevertheless, vintage 1995 offers richer and chunky wines (especially when compare to 1996). 1996 – Generally regarded as an excellent vintage for the Left Bank wines – a classic year for the Cabernet Sauvignon. Though the 1996 wines have taken longer than expected to evolve, their current matured state comes in the form of lengthy flavours, with mid palate well filled up. Though it is still early days for this vintage, the selected Left Bank wines in our list promise to impress. 1998 – It only make sense that there should be a vintage that speaks for the Right Bank wines, and 1998 is the epitome of what Merlot can do under an ideal vintage condition. At the best expressions of the harvest condition, it is regarded that Cheval Blanc, Ausone and Petrus represents the best a Merlot dominated wines can exhibit, and some even equate their quality with the later monumental 2000 vintage. Tips for enjoying Sauternes wines To enjoy wines from Sauternes, especially the much-‐revered Chateau d’Yquem, pick from the height of its maturity from vintages such as 1983, 1988, 1990. Those vintages showcased not only its ‘noble-‐rot’ nobility; it continues to evolve even in its current matured state. To enjoy the youthful exuberance of Bordeaux sweet white, look no further than to 2001, a great vintage comparable to 1937 and 1947, with almost all wine connoisseurs agreeing the best Sauternes from this magnificent vintage is Chateau d’Yquem.

Despite its delicate nature, those wines from Cote de Nuit and Cote de Beaune amazed with its youthful charm, and also stunned many with its aged splendor. No wonder lovers of Burgundy wines, somehow, display similar elegance in their mannerism, perhaps a case of like-‐mindedness? From diverse options available, we have chosen wines that are well crafted from renowned Domaine; yet, we have also taken note of handcrafted wines from emerging estates that will increase your enjoyment of vin de Bourgogne.
Tips for enjoying our Burgundy wine selections: Enjoying Burgundy wines-‐ Although Burgundy red and white wines are made from Pinot Noir and Chardonnay respectively, it would be an incorrect approach to enjoy all Vin Bourgogne Rouge and Blanc from a varietal perspective. Burgundy red and white wines are more than varietal in its expression; there are contribution of the soil types, sunlight exposure, location of vineyards and deft winemaking skill, thus, a Burgundy wine has layers of flavours, complexity from the flavours and nuances, exuding beauty and charm when appreciated as an entirety…and much more. Therefore, the best mantra to state those differences is “Burgundy has Pinot and Chardonnay, but Burgundy wines are not simply Pinot and Chardonnay”. For immediate enjoyment – the 2006 and 2007 vintage wines are showing lots of youthful charm and will certainly regale you with their primary fruit and traditional nuances. 1990s Burgundy-‐ In the decade of 90s, there were several vintages in Burgundy that were viewed as very good years, of which 1990, 1993, 1995, 1996, 1999 would be seen by most as generally reliable vintages. Now that wines from those vintages have the benefit of time to show its true character, without doubt, 1990 and 1999 are two of the great vintages from Burgundy, and there is no better time than to enjoy them now. Elegant white with delicacy – For Burgundy white wine fans, the ‘lightness of being’ can be best represented by fine and delicate wines from Puligny and Chassagne Montrachet. Both Puligny and Chassagne are wines that display finesse with minerality; Puligny can be steely, lean but at times exhibiting intensity on the palate; while Chassagne white wines are soft with an agreeable intensity in its flavour. Needed a full and rich Burgundy white wine? – Meursault offers a white wine that is full, rich in style and persistent in flavours; much of Meursault wines have a kiss of oak in its nuances with pleasant peaches and creamy note. Alternatively, a Corton Charlemagne, which can be subtle initially when its in the glass, it is known that its power and intensity emerges after some aeration. Perfumey with enriching flavours – Mere mention of Chambolle Musigny, most wine lovers would associate wines from Chambolle as the anti-‐thesis of Gevrey Chambertin. Chambolle rouge provides wonderful grace and elegance, yet dense, luscious and seductive on its bouquet. Some like to describe the best Chambolle reds as ‘Charming’ and ‘Amorous’ (also the name of two finest 1er Cru vineyards in Chambolle Musigny). Powerful with finesse – Gevrey Chambertin wines are known for its power due to varieties of soils and exposures. Domain de la Romanee Conti (DRC) Iconic Burgundy wines are few and rare; however, no one will dispute Domain de la Romanee Conti deserves to be standing on that great and mighty platform – for all its prowess (age of vines for DRC Romanee Conti averages 53 years old) and regard in the wine world, as well as its rarity (about 450 cases produced annually). Yet, when such elite wine was being crafted in an almost perfect vintage (2005), one cannot help but to savour every drop of this wine with a sense of privilege, humility and reverence - for what it offers now and what it can be.Though DRC produces miniscule wines (understandably so since all its wines are sited in Grand Cru site), in good years, they do produce seven wines, namely La Tache, Richebourg, Romanee St Vivant, Grands Echezeaux, Echezeaux, and a small lot of Montrachet (a white wine, nonetheless, of a Grand Cru status). It can be argued that both DRC La Tache (also a monopole similar to DRC Romanee Conti Grand Cru) and Richebourg can be seen as the alter-ego of its more renowned sibling - DRC Romanee Conti Grand Cru; La Tache is considered by some connoisseurs as a complete and satisfying representation of VosneRomanee, oozing the finest element of the quintessential premium Burgundy notes, a mere sampling of La Tache will also emit purity and provides pleasure that includes intellectual stimulation. Background on Old World Wines with Contemporary Charm As far as Classic wines are concerned, it will not be complete without the other major European wine nations (namely Italy and Spain). Instead of assembling a pool of usual suspects (e.g. traditional Chianti, Barolo, Rioja, Ribera del Duero, etc.), we bravely took the decision by selecting only wines that not only offer a heritage angle; they are also able to engage connoisseurs with a contemporary perspective. As compact a list as it is, we take pride in knowing that those wines will reward you with an added level of sophistication in your wine adventure. Tips for enjoying our Other Old World wines: The Super Tuscans – The story of Super-‐Tuscan started and took its effect in the 70s with Tenuta San Guido in Bolgeri, an area on the coast of Tuscany. The winery produced an artisan wine-‐ Sassicaia, which practically broke every rule in the Italy wine regulations. Sassicaia was not crafted for the sake of being different, this wine was mooted for a noble purpose, to rid the market of sub-‐standard Chianti wines, which was then flooded the market, and to restore the faith and repute of Tuscan wines. The success of Sassicaia, a lowly Vino da Tavola (Table Wine) status back then, inspired conscientious winemakers and wineries in relooking at producing high quality wines without the constraint of the wine body and regulations. Decades later, a new classification – IGT was created to address the high quality but non-‐ traditional winemaking approach. Nevertheless, the label of ‘Super-‐Tuscan Wines’ became the buzzword for many wine enthusiasts when referring to those premium quality wines -‐ wine that offers an international flair yet retain traditional notes; they are wines that are generally flamboyant, dense and powerful. The Stylish Spanish – One of the modern day impressive success stories in the wine world has to be Spain. The Spanish, over an amazing short period of time, miraculously transformed their image of mediocre quality wine producers to one that crafts some of the most exciting, original and sought-‐after wines in the world today. Though some of the traditional wine regions, such as Rioja and Ribera del Duero continues to produce wines that not only kept wine lovers interested, those vino also display traces of modern taste. Emerging wines regions from Priorat to Navarra and Toro have captured the attention of the wine world with their forward and contemporary wine style. Is there more to come from the Spanish? Their performance thus far, is in my opinion, just the tip of the iceberg; do watch out for wines from the Iberian Peninsula!

Joint venture wines – The simple way to understand such effort is to realize the impact and outcome of combining skills and knowhow from two wine worlds – the new and old. The first JV wine is a joint effort by the late-‐ Robert Mondavi and the late-‐Baron Philippe de Rothschild of the Chateau Mouton Rothschild fame. In 1979, OPUS ONE was born out of that joint effort by the two visionaries. Since then, a wave of Joint Venture wines emerged with many success stories from both the north and south hemispheres. The benefit of such approach is the creation of wines that combines the best of two wineries (or sometimes between a winery and an individual) with different origins and experiences. Some will dismiss those wines as merely trophy wines (because it is more often spoke about, but seldom being sampled or tasted by many), nevertheless, Cult and Boutique wines were so popular, demand constantly outstrips supply. Such rare wines are some of the best kept secrets in the wine world.
