Mock Lasagna/Baked Ricotta Pureed Diet, Vegetarian Makes approximately 2 cups INGREDIENTS
8 oz part skim, light or fat-free ricotta cheese (the lowest fat option you can find) ½ cup grated parmesan 1 large egg, beaten 1 teaspoon Italian seasoning ½ cup marinara sauce (look for sauce with lowest sugar content) ½ cup low-fat mozzarella cheese, shredded Salt & pepper, to taste PREPARATION
1 Mix ricotta cheese, parmesan, beaten egg and seasonings together. 2 Place mixture in a small baking dish. 3 Pour marinara on top of mixture and sprinkle with mozzarella cheese. 4 Bake it in the oven at 450 degrees F for about 20-25 minutes.
