BANANA BUCKWHEAT PANCAKES

1 banana 1 cup buckwheat flour 1 cup milk of your choice 1 egg ½ tsp apple cider vinegar ¼ tsp baking soda ½ tsp cinnamon Coconut oil, for frying Fresh/ frozen blueberries, to serve 

1. In a mixing bowl, mash the banana. 2. Add the buckwheat flour, milk, egg, apple cider vinegar, baking soda and cinnamon and mix well until everything is combined.   3. Melt a teaspoon of coconut oil in a frying pan over medium heat. Fry the pancakes for a minute or two on each side and serve immediately...  

Serves 1-2 // 5 minutes preparation // 5 minutes cooking time
