D ire cti ons 1. Preheat the oven to 350. 2. Brown the ground beef with the chopped onion. Once browned, drain well. Stir in the black beans, taco seasoning, diced tomatoes and let simmer for 5 minutes. 3. Line up 8 taco shells in a 7×11 inch baking dish. 4. Spoon meat mixture into the taco shells. Top with a pinchfuls of cheese. Bake in the preheated oven for 10 minutes. 5. Serve Beef & Bean Oven Tacos with desired toppings & side of veggies.
N OT ES I’ve added the ‘freezer friendly’ notation because the taco meat can be made in large batches and frozen. I love to brown 4-5 lbs of ground beef at once and then freeze it in 1 lb, or 1 meal, size portions. It makes getting recipes like this together and on the table in less time. For me, every minute in the kitchen counts!
➋ Roast Chicken with Zucchini & Tomatoes 8 Servings

D ire cti ons 1. Preheat oven to 400. Lightly spray 2 9×13 inch baking dishes, or 1 large baking/roasting dish with non-stick cooking spray. 2. Place the chicken pieces in the baking dishes. Add the zucchini slices, baby carrots and diced tomatoes around the chicken. Add a few garlic cloves throughout. Drizzle olive oil over the top of the chicken and vegetables. Season with the Italian seasonings and salt and pepper. 3. Place the baking dish(es) into the preheated oven and roast for 55 to 60 minutes, or until chicken is cooked through. 4. Meanwhile, prepare the rice or other preferred side dish. 5. Serve the Roasted Chicken with Zucchini, Tomatoes and Garlic with side of rice.
N OT ES The hands on time for this recipe is about 10 minutes. Just be sure to leave time for it to roast for an hour! I’m adding the make ahead icon, because you can add half of aall the ingredients to a plastic freezer gallon baggie and freeze to make the other half later. This recipe is written for 8 servings, or 2 9x13 pans!

➌ Slow Cooker Peach Glazed Pork Roast 4 Servings

1.5 lb. pork shoulder roast 1/2 tsp minced onion Salt and pepper 1/2 cup peach preserves 1 tsp ground ginger 1 1/2 cups brown rice, cooked Fresh veggies (side)
D ire cti ons 1. Place the roast in the base of the slow cooker, season with minced onion, salt and pepper. Add about 1/2 cup of water around the roast. (I do this to make the atmosphere inside the slow cooker nice and moist while the pork cooks.) 2. In a small bowl, whisk together the peach preserves and ginger. Spread over top of the pork roast. 3. Set the slow cooker on low and cook for 8 hours. 4. Prepare the brown rice and green beans as directed. 5. Serve Slow Cooker Peach Glazed Pork Roast with brown rice and green beans, or other favorite sides.
N OT E S Prepare the glaze and add it to the roast, then freeze to make later. When you see a great sale on pork roasts, grab a couple and freeze what you won’t eat that week. Freeze in the marinade or glaze, and it will marinate as it thaws...making for a delicious meal!

D ire cti ons 1. Defrost or thaw the potato wedges completely. 2. In a bowl, mix together the ground beef, bread crumbs and Italian seasoning. Toss in a little salt and pepper too. Make 12-16 small burger balls that you can skewer. Pack tightly, as they will loosen slightly as you grill them. 3. Cut the pickles, onions and break the cheese slices into 4 small pieces. 4. Skewer the burger balls, pickles, onions, and potato wedges. Grill for a few minutes on each side, until meatballs have cooked through. Cooking time may vary depending on thickness of burger and heat of the grill. Then move to indirect heat or top rack on the grill and place the cheese slice on top. Close the lid and let cheese melt, 2-3 minutes. 5. Serve Cheeseburger ‘n Fries Kebabs immediately with veggies side dish.
N OT E S I like to serve this with a simple salad or baby carrots. A simple, summer night’s dinner prepped on the grill!

➎ Slow Cooker Black Bean & Corn Enchiladas 4 Servings

15 oz. can black beans, drained and rinsed 15 oz. can corn, drained (or 2 cups frozen corn) 1 green pepper, seeded & diced 4 oz. can diced green chilies 1 tsp ground cumin 1 tsp salt 2 cups shredded quesadilla blend cheese, divided 2-3 cups salsa 12 corn tortillas, warmed Fresh veggies, as side dish
D ire cti ons 1. In a mixing bowl, mash the black beans with a potato masher or fork. Mix in the corn, green pepper, and green chilies. Stir in the ground cumin and salt. Last, add 1 cup of the shredded cheese and combine well. 2. Add about 1 cup of salsa to the base of the slow cooker and spread evenly on the bottom. Roll the bean-corn mixture into the warmed tortillas, dividing evenly. Place in the slow cooker, seam side down, nestled tightly together. Pour the other cup of salsa over the top and then sprinkle the other cup of cheese on top. 3. Set the slow cooker on low and cook for 3 to 4 hours. 4. Serve Slow Cooker Black Bean & Corn Enchiladas with veggies as side dish.

D ire cti ons 1. Preheat oven to 375. 2. In a large mixing bowl, combine the ground beef, eggs, drained crushed pineapple, bread crumbs, salt and pepper. 3. Add half of the mixture to a each 9×5 loaf pan. 4. Bake in the preheated oven for 1 hour. 5. Meanwhile, whisk together 1/2 cup of the reserved pineapple juice with the ketchup and brown sugar. For loaf pan: after 1 hour of cooking, pour the sauce over the top of the meatloaf and bake for another 10-15 minutes. 6. Prepare preferred side dishes. 7. Serve Hawaiian Meatloaf with sides. 8. To Freeze: Let come to room temperature, slice into meal size slices, and then place into plastic freezer baggie and place flat into the freezer. Reheat in the microwave when wish to serve again.

D ire cti ons 1. Whisk the ingredients, minus the toppings, together in a mixing bowl. Batter will be slightly ‘loose.’ 2. Generously spray the slow cooker with non-stick cooking spray. Pour the mixture into the slow cooker. 3. Set the slow cooker on low and cook for 5 hours. Keep warm until ready to serve. 4. Serve Overnight Slow Cooker Baked Oatmeal with milk/cream/yogurt and fresh fruit.
N OT E S This is an ‘overnight’ baked oatmeal that cooks in the slow cooker while you sleep. I recommend cooking it for 5 hours, then letting it sit on the warm setting for up to 3 more hours. If you’re slow cooker doesn’t automatically switch to a warm, setting, you could make this for a breakfast for dinner one night, or you could make it part of a batch cooking plan and you cool, then freeze the baked oatmeal in meal size portions.

➒ SALTED CARAMEL MOCHA FUDGE 4 Servings

1 cup butter 2 cups brown sugar 1 13oz. can Dulce de Leche flavored caramel sauce 1 cup chocolate chips 2 tsp instant coffee granules 1 tsp coarse sea salt about 1 Tbsp coarse sea salt for topping
D ire cti ons 1. Line an 8×8 inch glass baking dish with parchment paper. This will help easily remove the fudge once it is set. 2. In a glass microwavable mixing bowl, add the butter, brown sugar and Dulce de leche flavored caramel sauce. Microwave for 10 minutes, stirring every 2 minutes, scraping the sides of the bowl well. Then let cool for a few minutes. 3. In a small glass bowl, add the chocolate chips. Cook on high in the microwave for 1 minute, then stir. Cook for another 30 seconds, then stir. Repeat in 30 second intervals until smooth. 4. Stir the melted chocolate chips into the melted caramel. Then gently stir in the instant coffee granules and the coarse sea salt. Stir with an electric beater for 3 minutes, or whisk aggressively for 3 minutes. 5. Then spread the mixture into the prepared baking dish. Sprinkle some coarse sea salt over the top. 6. Chill in the refrigerator for about 2 hours, or until set. 7. Remove the fudge from parchment paper and baking dish. Place on a cutting board and slice with a sharp knife into 1-inch square pieces. Makes 48-64 pieces, depending on how large you slice the pieces. 8. Serve Salted Caramel Mocha Fudge. Try not to eat it all at once!
