BEEF CARPACCIO WITH VERJUICE This dish contains high quality, low-fat protein and is low on carbohydrates. A perfect combination to protect the skin.

90g Beef filet 1g sea salt 1g white pepper 2g hazelnut vinegar 2g chives 2g shallots 4g tomato paste 8g rocket salad 15g goat cheese 1g sea salt 1g black pepper 3ml olive oil 1,5ml lemon juice / Verjuice 3ml olive oil

At first cut the beef filet in thin slices. Then marinate it with sea salt, white pepper and hazelnut vinegar and press them thin between two marble plates. Next chop the chive and the shallots into small pieces. Spread a plate with olive oil and put the filmy beef filet on it. Then spread it with tomato pesto. Cut the goat cheese into small pieces or crumb it and spread it on the beef filet. Lastly salt and pepper it.
