3L Water 1 Lemon 25g pk Parsley

For the Marinade 12g pk Parsley 12g pk Mint 1 clove Garlic, finely chopped

30mL Lemon juice 75mL Olive oil 30g Breadcrumbs

Method Step 1 Prepare the artichokes by removing all outer leaves and internal flower part, then peel the stalk. Step 2 In a large pan, add the vinegar, salt, 3 litres of cold water and the juice of a lemon, then allow to come to a boil. Step 3 Add the artichokes and parsley. Step 4 For the marinade, finely chop the parsley and mint. Place in a bowl and add the garlic, lemon juice and olive oil. Step 5 Once the artichokes are completely cool remove them from the liquid and place in the marinade. They can remain in the marinade for a few hours or overnight (in the fridge).
