Blueberry Muffins Serves 10 Serving size: 1 muffin Plate Portions: 2 grains Ingredients: 1 c. whole wheat flour 1 c. all purpose flour 2 t. baking powder 1/2 t. salt 1/4 c. honey 1/2 c. light margarine 1/2 c. sugar or sugar substitute 2 large eggs 1 t. vanilla 1/2 c. skim milk 1 cup blueberries Cooking spray Directions: Preheat oven to 350 degrees. Combine flour, baking powder and salt. In separate bowl, beat margarine, sugar (or sugar substitute) and honey, until fluffy. Beat in eggs one at a time, then add vanilla. Add dry ingredients alternately with milk, stirring just until combined. Fold in berries and spoon batter into greased muffin tins.
