Ingredients • 1 cup whole almonds (unroasted, unsalted) • 120g pitted Medjool dates (about 8 ) • 1/2 cup dried sweetened cherries • 3 tbsp dark (or semi sweet) chocolate chips • 1/4 cup raw pecans or walnuts • Pinch sea salt
Making it 1. Process the almonds until finely chopped in a food processor 2. Remove 1/3 cup of the mixture and set aside for later 3. Add the pitted dates and process until finely chopped and sticky, the mixture will start to look like a dough. Add cherries and process again until combined. If the mixture forms into a large ball, break it up with a spoon and process more if necessary. 4. Add in the chocolate chips and pecans and process until they are just chopped. Add salt to taste. Pulse in the reserved 1/3 cup almonds for texture. Roll into small balls and enjoy!
TIPS & HINTS It’s ok if some bigger almond pieces remain.. Don’t be tempted to keep processing as you may end up with a flour and you want some texture to remain.
