9 to 12 lasagna noodles about 2 cups shredded rotisserie chicken 16 oz. jar alfredo sauce about 1 1/2 cups shredded mozzarella or Italian blend cheese Salt and pepper, to taste Fresh parsley, optional Fresh veggies or small side salad, as side dish

D ire cti ons 1. Preheat the oven to 350 F. 2. Boil the lasagna noodles and rinse with cool water. Set out onto towel and pat dry. 3. Add couple spoonfuls of sauce onto each noodle and spread thin. 4. Add couple pinchfuls of shredded chicken onto the sauce on each noodle. Top with a few pinchfuls of shredded cheese. Add salt and pepper, as desired. 5. Rollup each lasagna noodle and place into baking dish. Top with alfredo sauce and more shredded cheese. 6. Bake in the preheated oven for about 15 to 20 minutes, or until cheese has melted on top. 7. Prepare fresh veggies or small side salad. 8. Serve Chicken Alfredo Lasagna Rollups with a side of veggies or small side salad.

1 1/2 lb. chuck roast 5 oz. container orange juice 3 oz. jar Sweet Chili Sauce 1 tsp curry powder 1 tsp garlic salt 1/4 red cabbage head, shredded 12 oz. shredded carrots Handful cilantro leaves, chopped 2 tsp olive oil 1 tsp rice wine vinegar Salt and pepper, to taste 10 soft taco size flour tortillas Fresh fruit, as side dish

D ire cti ons 1. To the slow cooker, add the roast with the fat side up. Pour in the orange juice and pour the Sweet Chili sauce on top of the beef. Sprinkle the curry powder, garlic salt and pepper over the roast and sauce. 2. Set on low and cook for 8 to 10 hours. Once cooked, pull the beef apart using 2 forks, making the shredded beef. 3. Just before serving, make up the slaw by tossing together the shredded cabbage, carrots, chopped cilantro and the olive oil, vinegar, salt and pepper. If you like a tangy slaw, add more vinegar. 4. Add the slaw onto a tortilla, top with shredded beef and a few cilantro leaves, roll up and enjoy! 5. Prepare fresh fruit. 6. Serve Shredded Orange Thai Beef Tacos with fresh fruit.

1 3/4 cups quinoa 1/4 cup lemon juice 2 garlic cloves, crushed 1 cup finely chopped red onion 1 cucumber, chopped 3 medium sized tomatoes, diced Fresh oregano and parsley, chopped 4 oz. Feta cheese 2 boneless, skinless chicken breasts, cooked and diced, optional

D ire cti ons 1. Add 4 cups hot water to large saucepan, bring to boil. Once boiling, add the quinoa, stir, return to boiling, cover, reduce heat and let cook for about 15 minutes over low heat. It is cooked when the little circles separate from the grain. 2. In a mixing bowl, add the lemon juice, garlic cloves, chopped cucumber, chopped tomatoes, couple leaves of fresh chopped parsley and oregano. 3. When the quinoa is cooked, remove it from the heat and let it cool for about 10 minutes. Toss with the chopped red onion in a mixing bowl. Sprinkle the Feta cheese into the quinoa and toss lightly. 4. Serve Mediterranean Quinoa, as is or with optional cooked chicken breasts.

2 lbs. pork roast 1/2 small red onion, thinly sliced Salt and pepper, to taste 12 oz. can root beer 16 oz. bottle BBQ sauce 8 hamburger buns Coleslaw salad kit, as side dish 1 bag chips, as side dish

D ire cti ons 1. Thinly slice the red onion. 2. Place the pork roast and red onion slices in the base of the slow cooker and sprinkle with salt and pepper. Pour the root beer and BBQ sauce over the pork roast. Set the slow cooker on low and cook for 8 hours. 3. Prepare the Coleslaw salad just before serving. 4. Once the pork roast is cooked, shred the meat with 2 forks and toss with the sauce. Spoon shredded pork onto hamburger buns and top with Coleslaw. 5. Serve Slow Cooker Root Beer Pulled Pork with a side of chips.

4 Tbsp butter 4 Tbsp flour 2 cups milk Salt and pepper, to taste 1 cup chopped mushrooms 2 large boneless, skinless chicken breasts 2 Tbsp ranch dressing mix 4 oz. cream cheese, cut into 1/2” cubes Dinners rolls, as side dish Fresh veggies, as side dish

D ire cti ons 1. Melt the butter in a skillet. Whisk in the flour. Pour the milk and whisk until smooth. Over medium heat, bring to bubbling and the sauce will begin to thicken. Add salt and chopped mushrooms. 2. Place the chicken in the base of the slow cooker and season with salt and pepper and then add the ranch dressing mix spices over the top. Pour the homemade cream of mushroom soup over top of the chicken. 3. Set your slow cooker on low and cook for 8 hours. When there is 30 minutes left in the cooking cycle, switch the slow cooker to high and add the cubed cream cheese. 4. Prepare dinner rolls and fresh veggies. 5. Serve Creamy Ranch Chicken with a side of veggies and dinner rolls.

➏ Roasted Cod with pesto 4 Servings active Time Cook Time

1 lb. cod fillet Salt and pepper, to taste 4 Tbsp pesto sauce Fresh veggies, as side dish 1 cup brown rice, as side dish

D ire cti ons 1. Cook rice, as directed on package. (Note: brown rice can take up to 50 minutes.)* 2. Preheat oven to 400 F. Lightly spray a glass baking dish with cooking spray. 3. Cut the cod fillet into 4 pieces. Season each piece with pinchful of salt and pepper. 4. Spread 1 Tbsp pesto onto each piece. Bake for 10 to 15 minutes, or until cooked through. Cooking time will vary depending on thickness of the fillets. 5. Prepare fresh veggies. 6. Serve Roasted Cod with Pesto with a side of veggies and rice.

D ire cti ons 1. Mix up your favorite pancake mix and start cooking. 2. Add the butter and maple syrup to a medium size sauce pan and heat until the butter melts. Stir in the peach slices and reduce heat to medium-low. Sprinkle a little cinnamon over the top. Stirring often, cook for 7 to 9 minutes, or until the peaches have darkened slightly and softened. Remove from heat until pancakes are ready for the Peach Syrup. 3. Serve Pancakes with Peach Syrup.

D ire cti ons 1. Fry 4 eggs in a large skillet. Season each one with a little salt and pepper. 2. While eggs are frying, toss together the lettuce, dressing and Parmesan cheese shreds. 3. Plate the salad and add a fried egg to each portion. 4. Serve Fried Egg Caesar Salad with optional croutons.
