Ingredients • 1 tbsp. olive oil • 500g lean ground beef • 1 packet chili spice mix • 1 tin chopped tomatoes • 1 tin kidney beans • 1 green pepper, diced • 1 red pepper, diced • 1 onion diced • 7-8 mushrooms, sliced • 1/2 cup brown basmati rice per person • 1/2 cup water
Making it 1. Pour olive oil in a non-stick pan and heat on medium 2. Add onions and cook for 5 minutes 3. Add beef and cook for 5 minutes until browned, breaking up any lumps 4. Add chili powder and water 5. Stir in tomatoes, remaining vegetables and kidney beans. Reduce heat and simmer, partially covered, for 15 minutes. Stir occasionally. 6. Serve with salad leaves, rice or a crusty bread roll.
