Here, intense sunlight, coupled with a lack of rainfall, translates to deeply concentrated color, flavor and structure in the glass. Located just outside of Seattle, the iconic Columbia tasting room offers daily tastings and Northwest-inspired offerings. About the Wine: Rich and spicy, our Horse Heaven Hills Cabernet Franc offers flavors blackberry and cherry intertwined with notes of brown spice and hints of dried sage. The firm tannins join with a racy acidity for a complex wine that pairs well with a variety of foods from a summertime arugula and apple salad to herb-roasted chicken. Viticulture Notes: In 2013, we sourced all of our Cabernet Franc grapes from the Horse Heaven Hills AVA, within the larger Columbia Valley AVA. In 2013, this region had a warm growing season resulted in smaller berries with a lower skin-to-juice ratio, creating wines with more concentrated color and flavor than years past. The hotter-than-usual temperatures gave way to a cool harvest in September and October. This unusually quick weather shift resulted in grapes with intense flavors with balanced acidity. Winemaking Notes: After harvesting in October 2013, the Cabernet Franc grapes for this wine were destemmed at the winery and then transferred to tanks. Fermentation occurred at 85°F in small-lot, stainless steel tanks. During fermentation, pump-overs were used for intense extraction of color and flavor. Five percent Cabernet Sauvignon enhanced the structure of the overall wine and three percent Petit Verdot deepened the color of the final blend. Malolactic fermentation was completed to create a round mouthfeel. All lots were barrel aged in 225-liter barrels for 17 months in a combination of French and American oak barrels, 27% of which were new.
