Recipe of the Month Christmas Pudding Ingredients: 3/4 cup shortening 1 cup sugar 1 cup flour 1 cup grated raw potato 1 cup grated raw carrot 1 cup raisins 1/2 cup mixed fruit 1/2 cup currants 1 tsp. soda 1/2 tsp. each cinnamon, nutmeg, cloves

Directions: Cream shortening & sugar. Add grated carrots and 1/2 cup potatoes. Mix flour and spices. Add to cream mixture. Add soda to remaining 1/2 cup potato, stir, add to mixture. Add raisins, currants & mixed fruit. Fill quart jars half full. Place in canner. Process for 1 1/2 hours. Serve with caramel sauce.
