Easy Peasy Peachy Pastries

Ingredients Ready rolled puff pastry Apricot jam Sliced peach segments Instant packet custard Beaten egg

Method Pre heat the oven to 180 degrees Roll out the pastry onto greaseproof paper then onto a baking tray Cut into equal size rectangles – about 6cm x 12cm Lightly spread the jam in the middle using the back of a spoon; be careful not to get the edges too (this will make the pastry soggy and it won’t pinch together). Put a small spoon of the thick custard onto the jam right in the middle of the rectangle (don’t spread the custard though, the peach will spread it down enough). Add the peach slice. Pinch the long sides of the rectangle together, just in the middle or use small long strips of cut pastry pieces to wrap around the middle. Brush with the beaten egg and put in the oven for 15 minutes.
