Eggplant & Potatoes Courtesy of Lavette Blue from The Greener Garden Ingredients        

1 medium eggplant 3 white potatoes 1 medium green pepper 1 medium onion 1 medium or large tomato 1 or 2 garlic cloves 1 to 2 teaspoons soy sauce Cooking oil

Directions Peel and cube potatoes. Stir fry in a pan with a little oil (use a small amount of seasoning) until almost cooked. Remove from pan and place into a bowl until later. While the potatoes are cooking, peel and cube eggplant, chop onions, garlic, and green pepper. After removing the potatoes, put those ingredients in the pan with a small amount of oil. Cook until almost done. Then add potatoes and chopped tomatoes. Sprinkle with soy sauce (about a teaspoon or two) and let simmer for 3 to 5 minutes. Serve with a salad or another vegetable.
