Thoughts from one of our egg producers, Kate Potter. I thought you might like to know what makes our eggs worthwhile. You simply will never eat better eggs, when I crack one into the skillet in the morning I am always amazed at the glowing orange of the yolk and at the way it stands up perky in the pan. The white has integrity too. It has a good round shape and does not spread. Then when they are cooked and on the plate….it’s heaven. The flavor is rich and orange, Chickens were created to run free, selecting from the earth what they like to eat: worms, bugs, larvae, dandelions and grass. They eat their share of the feed I put before them, but when they’re not laying eggs or roosting in the pine trees, the roam, scratch and peck, which is just as it should be.

Thoughts from Erin Meyer at Basil’s Harvest. I am so excited about the spring selection of soups. I have focused on the local spring vegetable harvest working with area farmers to buy their fresh produce to create great tasting soups. Image Ricotta, Spinach, & Chicken dumplings with fresh pasta strips, Cream of Asparagus, Spring Vegetable soup in a light vegetable stock, Split pea with Pottstown Meat & deli bacon, Beef Barley, & Tomato Basil Soup.
