Grilled Halibut with Marinade Serves 4

Ingredients  4 fresh halibut steaks (8oz each, 1 inch thick)  1 small sweet onion, coarsely chopped  3 garlic cloves, coarsely chopped  1 piece (1 inch) fresh ginger, coarsely chopped  1-2 Serrano or jalapeno peppers  3 Tbsp. olive oil  3 Tbsp. fresh lemon juice  1 ½ tsp. sea salt  ½ tsp. cracked black pepper  1 tsp. ground coriander Basting Mixture Ingredients  ½ tsp. sea salt  ½ tsp. cracked black pepper  ½ tsp. red pepper flakes  2 Tbsp. olive oil

Directions 1. To make the marinade, combine the onion, garlic, ginger, peppers, lemon juice, olive oil, sea salt, coriander and black pepper in a blender. Add 2 Tbsp. of water and puree until smooth, adding more water as necessary to obtain the thickness of a marinade. 2. Pour marinade over fish in a plastic zip lock bag. Seal bag and place in refrigerator for at least 2 hours or overnight. 3. To make basting mixture, combine all ingredients in a small bowl and whisk together. 4. When ready to cook, drain the marinade from the fish and discard. Brush each piece of fish on both sides with the basting mixture. 5. Grill the fish, turning frequently until cooked throughout over medium heat, for a total of approximately 4-5 minutes on each side or until fish breaks into clean flakes. Brush the fish with any remaining basting mixture as it cooks.

Tips  In place of halibut, you can use other white fish fillets, such as sea bass, tilapia or cod.
