PREPARATION: 1.
Preheat oven to 425 degrees F. Add one inch of water to a saucepan and simmer. Place chicken in the saucepan. Steam, covered for 10 minutes. Remove chicken from saucepan. Cool and pat dry.

Remove skin from the chicken drumsticks.

Toss with sriracha sauce and a pinch of salt. Place on baking sheet in a single layer. Bake for 15 minutes.

Meanwhile, mix the yogurt with the blue cheese. Cut the celery stalks into 3- to 4-inch pieces.
5.
To serve, place blue cheese dip in a bowl and display it on a large, round tray. Place chicken drumsticks and celery on the platter, surrounding the dip.
