! Jerk Chicken Salad with Fresh Pineapple Salsa!
Ingredients:! 2 thin cut chicken breasts! 1 package spring salad mix! 1 avocado, sliced! For the marinade:! 1 Tbsp Hot and Spicy Jerk Seasoning! 3 Tbsp Hasty Bake BBQ Sauce! 3 Tbsp red wine vinegar! 3 Tbsp extra virgin olive oil! For the vinaigrette:! 1 tsp Hot and Spicy Jerk Seasoning! 1 Tbsp Hasty-Bake BBQ Sauce! 1 Tbsp red wine vinegar! 3 Tbsp extra virgin olive oil! For the pineapple salsa:! 1 cup diced fresh pineapple! 1 small red onion, diced! 1 red bell pepper, diced! 1 jalapeƱo, small diced! 1/2 cup fresh cilantro, chopped! Juice of 1 lime!

Instructions:! 1. Place chicken in a shallow dish.! 2. For the marinade, add jerk seasoning, BBQ sauce, red wine vinegar, and olive oil to a small bowl and whisk until combined. Pour over chicken and allow it to marinade for 20 to 30 minutes.! 3. For the vinaigrette, add jerk seasoning, BBQ sauce, and red wine vinegar to the same small bowl and slowly drizzle the olive oil while you whisk. Put to the side, until ready to dress the greens.! 4. For the pineapple salsa, place all ingredients in a medium bowl and stir to combine. Add salt to taste, if needed, and set aside until chicken is ready.! 5. Once the chicken is finished marinating, get a large skillet nice and hot over medium-high heat. Add chicken directly to pan. (The olive oil in the marinade prevents it from sticking) Cook for 2-3 minutes on each side, or until golden brown. The great thing about using thin cut chicken breasts, is that they take very little time to cook through.! 6. Add spring mix to a large bowl, add vinaigrette, and toss to coat.! 7. To build the salad, place a mound of dressed greens on each place, then add avocado slices, chicken breasts, then pineapple salsa.!
