How to Make Kraut With Your CSA Cabbage!

At the most basic, all you need is cabbage, salt, and some sort of container to store it while it's fermenting.

It's important that the cabbage remain submerged in its liquid during fermentation. When fermenting in a mason jar, inserting a smaller jelly jar filled with rocks or marbles in the mouth of the larger jar serves the same purpose.
The cabbage near the surface tends to float, so when fermenting in a mason jar, you need to either tamp down the cabbage a few times a day or place a large outer leaf of cabbage over the surface of the shredded cabbage to hold it down. Also be sure to keep the jar covered at all times with a clean cloth or piece of cheese cloth. This will allow airflow, but prevent dust or insects from getting into the sauerkraut. For a small quart-sized batch like this, the minimum time is about three days until ready.
Roasted Parmesan Cauliflower
Ingredients 1 head cauliflower 1 sliced medium onion 4 thyme sprigs 4 unpeeled garlic cloves 3 tablespoons olive oil Kosher salt Freshly ground black pepper 1/2 cup grated Parmesan
How To Make Preheat oven to 425°F. Cut 1 head cauliflower into florets; toss on a large rimmed baking sheet with 1 sliced medium onion, 4 thyme sprigs, 4 unpeeled garlic cloves, and 3 tablespoons olive oil; season with kosher salt and freshly ground black pepper. Roast, tossing occasionally, until almost tender, 35-40 minutes. Sprinkle with 1/2 cup grated Parmesan, toss to combine, and roast until cauliflower is tender, 10-12 minutes longer.

Crockpot Applesauce Ingredients 6 large apples, any variety (approximately 3 pounds) 2 cinnamon sticks, optional 1 tablespoon lemon juice 1/2 cup water 1/4 teaspoon salt
How to Make It Peel and chop the apples: Peel the apples with the vegetable peeler, then cut them into quarters and slice out the cores. Roughly chop apples into 1- to 2-inch pieces, depending on how chunky you prefer your applesauce. Combine all the ingredients in the bowl of the slow cooker, and close the lid. Cook the applesauce: Cook on high for 4 hours, stirring twice during cooking. Puree the applesauce, optional: If you like chunky applesauce, you can skip this step altogether. But it you prefer a more smooth texture, remove the cinnamon stick, then use an immersion blender to puree the applesauce until it reaches the consistency you like. Cool and store: Cool the applesauce, then divide between several containers. Cover and store in the refrigerator for up to 5 days, or freeze for up to 3 months. CSA Manager Note: I have actually done this without peeling the apples and then use my immersion blender to blend the peelings and the whole fruit all up. Notes from the CSA Manager! Hello everyone! Just a couple of notes here: 1. Please return all boxes! We reuse the veggie boxes, cardboard meat and cardboard fruit boxes. 2. We cannot reuse the plastic pint containers so please recycle those on your own.
