COFFEE INFORMATION

THE LOS SANTOS IS ANOTHER COFFEE WHICH COMES TO US VIA THE EXPERTISE OF LUIS PEDRO ZELAYA, A FOURTH GENERATION GUATEMALAN COFFEE FARMER AND LEADER IN THE ANTIGUAN COFFEE COMMUNITY WHO ALSO BROUGHT US THE HUNAPU FROM THE LAST HARVEST. Luis has set up an organized network for coffee collection in an area just north of Antigua, in the department of Chimaltenengo. This area is different to the large-scale Antiguan estates as it is dotted with numerous smallholder farmers and locals primarily use native Indian dialects instead of Spanish. The two main collection cities are San Martin Jilotepeque and San José Poaquil. This area is lush and filled with potential as the standard elevation surrounding these cities is extremely high and coffee can grow at nearly 2000 masl. Once collected, the beans are then transported back to the city of Antigua and Luis’ Bella Vista mill.

Although coffee has been growing in these outlying regions for generations, Luis Pedro’s influence is contributing significantly to progress in this area. With his expertise, farmers are realizing why it is important to harvest only the best cherries, and his passion for offering incentives for specific levels of ripeness means the region’s potential is being realised. For example, Luis Pedro has intuitively implemented a programme where a random sample is taken from every shareholder’s daily pickings. The sample is examined and if it is 80% or more ripe, the owners receive a premium for their coffee. Because the final result in the cup always starts with the maturation and picking of the cherry, it is measures like this which are developing quality and, hopefully, building the reputation of a lesser known region into a quality brand.
