Mango Salsa SERVES 4-6

1 large mango, peeled, seeded, diced 6 medium ripe organic tomatoes, peeled, seeded, diced (see tips below) 1 Tbsp Extra Virgin Olive Oil 1 sweet onion, diced 2 Tbsp fresh cilantro, chopped 1/4 tsp sea salt 1/8 tsp cracked black pepper 1. Heat the olive oil in a skillet over medium heat. Add the onions; saute until softened. Add onions to a large bowl. 2. Place mango, tomatoes, cilantro, sea salt, and black pepper in the bowl with onions.  Mix all ingredients thoroughly before serving. To peel and seed tomatoes, place the tomatoes in a large bowl. Cover tomatoes with boiling water and let stand for 1 minute. Remove tomatoes from boiling water. Using a knife, pierce the skin and peel it off. Cut the skinless tomatoes into quarters, then cut out the core and remove the seeds. Use this recipe as a topping for chicken or fish. If you need to ripen the mango, place it in a paper bag in a dark place and it will ripen within a few days.
