Miso (deboned) Japanese Cucumber for garnish Small Chilli for garnish
Preparation 1. To make up marinade, blend mayonnaise, Mirin, Sake and Miso paste. 2. Marinate chicken for one day in 200g blended paste. 3. Brown chicken in the oven at 180°C for 10 minutes. 4. Dice chicken and place over a bed of thinly-sliced Japanese cucumber. Heat remaining Miso sauce and drizzle over chicken. Sprinkle with sliced small chilli and serve.
