Meat Pick Packs Now Available! While May has started off less than ideal, the weather has not kept us from moving forward! Over the past month we have gotNYS Beef Council and Local ten our Walk-In Freezer Culinary Students getting a fully functional and full of tour of our farm meat, water lines run all M E A T P I C K P A C K S over the property, put up our greenhouse built chicken tractors for our Variety Pack new chicks, had another -3 lbs Ground Beef litter of piglets, helped our -2 Sirloin Steaks cows move into calving -2 lbs Pork Sausage season and continued -3 lbs Pork Chops starting many seeds for Cost: $50 our vegetable garden! (Value of $60!) We finalized our Farmer’s Markets that we will be Economy Pack attending this summer. We -4 lbs Ground Beef will be at Westside, Gene-4 lbs Pork Chops -3 lbs Pork Sausage Cost $45 (Value of $50!)

Some even helped us set up our greenhouse. We love having people out to the farm to see the animals, take a tractor ride and learn about our farming practices. We are now offering “Meat Pick Packs” that contain our pasture-raised pork and all natural beef. These pick packs are a great deal for you and your family to

get a healthy combination of our sustainably raised meat. Meat Pick Packs are great for those that do not have the freezer space for a whole or half of beef or pork but want to enjoy local, All– Natural meat. Recipe of the Month: Sirloin Steak & Tomato Salad

Instructions

1. Brush onion slices with 1 tablespoon vinaigrette; set aside. Press chile powder onto beef steak. Place steak in center of grid over medium heat, arrange onions around steak. Grill steak, covered, 11 to 15 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Grill onions until tender, turning occasionally. ~1/3 cup plus 1 tablespoon 2. Separate onion slices into rings. balsamic vinaigrette, divided Carve steak into slices.
