Fun Cucumber Facts  Cucumbers belong to the plant family that also includes melons, squash and pumpkins.  A cucumber is more than 95% water!  The two main types of cucumbers are slicing (eaten fresh) or pickling (made into pickles!). Even though pickles are made from cucumbers, they’re high in sodium which makes their freshly-sliced cousins much healthier for you!  Cucumber slices placed over the eyes may help reduce puffiness, thanks to the cucumber’s water content and caffeic acid.  The phrase “cool as a cucumber” has merit. This vegetable’s high water content gives it a moist and cooling taste!

Shopper’s Tips

Cucumbers

 Look for long, slender cucumbers for best quality. They should also be green in color, either dark or light, but not yellow.  Cucumbers can be stored in the refrigerator, but should not be washed before storing.  Don’t store your cucumbers near fruits as many fruit surfaces contain ethylene gas to enhance ripening. This will cause the cucumber’s seeds to become hard.  Don’t peel that cucumber! The skin of the cucumber is high in fiber and contains many beneficial minerals including potassium and magnesium.

Chili-Lime Cucumbers 1 small cucumber 1 tablespoon chili powder Juice of 1 lime Dash of salt Slice the cucumber into thin slices. Drizzle with lime juice. Sprinkle with chili powder and a dash of salt. Enjoy! source: www.chilipeppermadness.com
