Quick bircher muesli + spiced cranberries When I first made this I would soak the apples overnight, but finely slicing them works just as well and is super quick. My daughters love this, which is great because I know how healthy it is. 150g (1 cup) quick-cook oats 250ml (1 cup) milk 250g (1 cup) Greek yoghurt 1 teaspoon vanilla extract 1 tablespoon honey 3 apples, finely sliced into matchsticks on a mandolin 50g whole almonds, lightly toasted and roughly chopped Mix together the oats, milk, yoghurt, vanilla extract and honey and leave to sit for 10 minutes or longer to soften. Divide between serving bowls and top with the apple. Add more milk if a thinner consistency is preferred. Sprinkle with the almonds and serve with the spiced cranberries. Serves 4–6 Spiced cranberries 110g (½ cup) caster sugar 5 tablespoons freshly squeezed orange juice 1 cinnamon stick 300g frozen cranberries Place the sugar and orange juice in a saucepan over low heat and slowly dissolve the sugar. Add the cinnamon stick and bring the syrup up to the boil. Add the cranberries and cook for 1–2 minutes, until they soften but still hold their shape. Remove with a slotted spoon and place in a serving bowl. Return the syrup to the heat, bring to the boil and cook until reduced by half. Discard the cinnamon stick and pour the hot syrup over the cranberries. Set aside until needed.
