A trio of Brindisa alumni have opened their first venue – a meat-focused Spanish restaurant and tapas bar that can be accessed from London’s Borough Market. Ruben Maza and Joel Placeres oversee front of house and wine, and Roberto Castro, formerly head chef of Brindisa Tapas Kitchen, mans the stove. Set beneath the arches near London Bridge, the team has made the most of an awkward space. Castro’s menu is big on large sharing cuts of meat but classic tapas dishes are also available. Bar 44 The brothers behind Bar 44, have launched their third establishment in Cardiff following the success of restaurants in nearby Cowbridge and Penarth. Tom and Owen Morgan have taken over the Feather and Bone and created a 120-cover venue serving contemporary tapas dishes made using seasonal ingredients from Spain and Wales. Hungry Donkey Hungry Donkey in London’s Aldgate is a restaurant pitched at both City workers and casual diners focusing on sustainability. Inspired by Hellenic street food, the menu centres on souvlaki but also includes filo pastry pies and

The team behind ethical fish and chip restaurant Hook in Camden has launched its second London restaurant in Pop Brixton. The fish arrives cooked in light tempurastyle batters or coated in panko crumbs with eclectic seasonings including Cuban, Cajun and jerk. The menu includes cod, hake and megrim sole, delivered daily from Cornwall, alongside seaweedsalted chips and craft beers. Street Kitchen Located in the City of London’s Broadgate Circle, street food vendor Street Kitchen has opened its first permanent site hoping to appeal to health-conscious City workers. Its fast and accessible menu is sourced from sustainable organic UK producers. Gourmet sandwiches are sold by the inch alongside salad boxes. Sandwiches are made of focaccia bread with fillings such as charred organic broccoli with free-range eggs, and rare roast beef with caramelised onions and pickled cucumber. Morden & Lea Chef-restaurateur Mark Seargant has opened his first restaurant in Soho, Morden & Lea. Named after the cartographers that mapped the London district, the venue is split across two floors with the
ground floor catering to a casual crowd – think cocktails and small plates – while the upstairs is more refined with a menu that includes cumin-roasted quail with smoked aubergine, polenta chips and spiced yoghurt. Top Dog Husband and wife team Matt and Marissa Hermer have launched a American-inspired hot dog restaurant in London’s Soho with the help of Fortnum & Mason CEO Ewan Venters. The concept sees an American classic meet high-quality British ingredients.
