➊ Roasted Maple-Mustard Chicken 4 Servings

3 boneless skinless chicken breasts, about 1.5 lbs. 1-2 Tbsp minced onion Salt and pepper About 2 lbs. red potatoes, quartered 4 carrot sticks, peeled and cut into chunks 1/4 cup maple syrup 1/4 cup Dijon mustard

D ire cti ons 1. Preheat oven to 400 F. 2. To a large roasting pan, or glass baking dish, add the chicken breasts in the middle and season with minced onion, salt and pepper. 3. Add the quartered red potatoes and carrot sticks around the chicken. 4. In a small bowl, whisk together the maple syrup and Dijon mustard. Pour over the top of the chicken and veggies. 5. Roast in the preheated oven for about 30-40 minutes, or until chicken is cooked through and potatoes are soft. Cooking time may vary depending on thickness of the chicken and size of the potatoes. 6. Serve Roasted Maple-Mustard Chicken with potatoes and carrots.

D ire cti ons 1. Bake the potatoes, or cook them in the microwave if you are short on time. 2. Brown the ground beef with the onion. Drain and return to the skillet. Mix in the tomato sauce, bell pepper, chili powder, ground cumin, garlic powder and season with salt and pepper. 3. Add the taco meat on top, then sprinkle cheese on top and microwave or run under the broiler to melt the cheese. 4. Boil the corn cobs or prepare fruit. 5. Serve Taco ‘Taters with buttery corn cobs and fresh fruit.

N OT ES *Freezer Friendly: You will have at least 1 meals worth of taco meat leftover. To freeze, let cool completely in the fridge and add to a plastic freezer baggie or container. page 1

1 1/2 cup brown rice 15 oz. can small kidney red beans 1 red bell pepper, seeded and chopped 1 green bell pepper, seeded and chopped 6 oz. can tomato sauce 1/4 cup lime juice 1 teaspoon ground cumin Salt and pepper to taste Cilantro, optional garnish Fresh veggies, as side dish

D ire cti ons 1. In a large saucepan or Dutch oven, bring 3 ½ cups of water to boil. Add the brown rice and return to boil. Cover, reduce heat to medium and cook the brown rice for 45 to 50 minutes, or until tender. 2. Once the brown rice is cooked, stir in the beans, chopped red bell pepper, chopped green bell pepper, tomato sauce, lime juice and ground cumin. Season with salt and pepper to taste. 3. Turn heat to low, cover and keep warm until serving time. 4. Prepare veggies. 5. Serve Fiesta Beans and Rice with fresh veggies as side dish.

D ire cti ons 1. Preheat oven to 350 F. 2. In a large mixing bowl, combine the ground beef, zucchini shreds, egg, bread crumbs, Italian seasoning, salt and pepper. Form into large meatballs, mine were about 1 1/2 to 2 inches in diameter and I made 16 meatballs. Place into a 7x11 or 9x13-inch glass baking dish. Then top each meatballs with dollop of spaghetti sauce. 3. Bake the meatballs in the preheated oven for 25-30 minutes, or until cooked through. Cooking time will vary depending on size and thickness of the meatballs. 4. Cook the pasta as directed, and prepare fresh veggies. 5. Serve Zucchini Meatballs over pasta with spaghetti sauce with side of fresh veggies.

N OT E S Freezer Friendly: You can freeze meatballs before they are cooked. Place onto a piece of foil and wrap up completely, then place into plastic baggie. Freeze up to 6 months in fridge freezer or 12 months in deep freezer. page 2

D ire cti ons 1. Preheat oven to 400 F. 2. Open up the English muffins and place face up on a baking sheet. Spread a large spoonful of pizza or marinara sauce onto each piece and sprinkle a pinchful of shredded mozzarella cheese on top. Add the pepperoni, diced bell pepper, olives or other favorite pizza toppings on the cheese. 3. Bake in the preheated oven for 10 minutes, or until cheese has melted. 4. Prepare fresh fruit. 5. Serve English Muffin Pizzas with fresh fruit.

D ire cti ons 1. Warm tortillas in oven or microwave. 2. Cook diced potatoes in small amount of water in bottom of skillet (use oil if you prefer “greasier” potatoes!). Season with salt and pepper. 3. When cooked, transfer to plate. Scramble the eggs in the same skillet. When the eggs are almost fully scrambled, stir in potatoes and mix together. 4. Spoon the egg/potato mix into tortilla, then add a spoonful of salsa and sprinkle with a pinchful of shredded cheddar cheese. Roll and eat warm. 5. Serve Potato, Egg & Cheese Tacos with fresh fruit.

1 pint blueberries 1 pint blackberries 1 pint raspberries 2 large eggs 1/4 cup applesauce 1/4 cup canola or vegetable oil 1/2 cup sugar 1 1/2 cups milk 3 cups quick cooking oats 1/2 cup wheat flour 2 tsp baking powder 1 tsp salt 1/4 cup brown sugar, for sprinkling 2 tsp cinnamon, for sprinkling 1 tsp ground nutmeg, for sprinkling

D ire cti ons 1. Preheat the oven to 350 F. Spray a 9×13 baking dish with non stick cooking spray. 2. Toss the blueberries, raspberries and blackberries in the baking dish. 3. In a mixing bowl, whisk together the remaining ingredients, except the brown sugar, cinnamon and nutmeg. Pour the batter over top of the fruit and stir gently to combine the fruit. 4. Sprinkle the brown sugar over the top. Then sprinkle the cinnamon and nutmeg over the top. 5. Bake in the preheated oven for 25 to 30 minutes, or until toothpick comes out clean in the middle. 6. Serve Triple Berry Baked Oatmeal with milk, cream, or yogurt for breakfast, or drop in a lunchbox, or for a fun weeknight ‘brinner.’

D ire cti ons 1. Cook the bacon, hard boil the eggs. 2. Cut the lettuce head into quarters, removing the stem. 3. Place the wedge flat on a plate or shallow bowl. Pour the ranch dressing over the wedges. 4. Top with the shredded chicken, tomatoes, cucumbers,crumbled bacon, crumbled boiled egg, shredded cheese or whatever other toppings. 5. Serve Wedge Cobb Salad with fresh fruit.

N OT ES I recommend keeping a baggie of cooked and shredded chicken in the freezer at all times, so you can quickly prepare recipes like these.

D ire cti ons 1. Split the banana lengthwise, making flat pieces of the banana. 2. Spread the sugar out of a small plate and dip the banana side into the sugar, it should stick to the banana. 3. Grill the split bananas in their peels with the sugar side down for 3-4 minutes. Remove and top with ice cream and toppings and serve immediately. 4. Serve Grilled Banana Splits.
