e are always looking to further develop and add to our existing range of products. We passionately believe that the kitchen is the heart of the home, therefore we continue to develop families of colours and finishes to allow individual tastes to be catered for.

Todays key trend is ‘texture’ and there are so many exciting ways which you can mix-and-match tactile surfaces. However, if you are after a more classic finish, then mixing colours is the perfect way to create an iconic design. What is behind the door is also playing a large part in the design process with more people opting for larder and pantry storage solutions. Wood effect drawers and extra wide pan drawers are also key features which when combined with a mix-and-match design, adds another dimension to the kitchen scheme. The possible options are somewhat endless but what is constant, is the potential for individual design and the creation of fantastic looking room space. The Sigma 3 Experience
Tom Warzyacha, kitchen designer at the Swansea branch shares his latest project with us. If you’re searching for an innovative and unique kitchen design and great customer service, you won’t be disappointed with what Sigma 3 has to offer. I’m always excited at the prospect of a challenge and I wasn’t disappointed with Mr Curtis’ renovation plans. He’d decided to remodel the ground floor of his home to create a kitchen and living space, perfect for socialising with family and friends. It was great to find out he’d decided to come to Sigma 3 because of our reputation, and he loved knowing that our kitchens are manufactured locally in South Wales. When any new customer comes through our door we make sure they feel completely at ease, it’s important to us that you think of us as a friendly face who’ll listen to your ideas. After careful consideration Mr Curtis decided on an Ivory high gloss semi
handleless door, which is perfect to keep the space looking light and modern. With any kitchen design it’s important to optimise every space available and with all the clever storage and design features we offer, we can create something innovative and unique. When we finish any design project we’re always keen to hear what are customers think of us, we pride ourselves on giving our customers a first class service, so we were overwhelmed with the verdict given by Mr Curtis.

Summer is here, which means one thing it’s out with the old and in with the new. It’s time to start thinking about those renovation projects and give your kitchen a fresh new makeover. We’ve caught up with kitchen designer, Dan Thomas, to discuss his latest showstopper. Being part of creating someone’s dream home is the most rewarding part of my job. It’s always exciting for me when customers visit the showroom loaded with inspirational ideas. My biggest advice to customers is to be brave and don’t settle for that standard design. We’re lucky at Sigma 3 we have many design and storage features customers wouldn’t be able to find elsewhere, so we can create that unique design with a bespoke touch.

When I first met Mr & Mrs Bevan I could see that they were up for the challenge of creating something really special and I couldn’t wait to help them with their kitchen journey. Similar to many families they wanted to extend their home to accommodate a large family space to bring everyone together. We know that family life can be busy so our main purpose is to transform the kitchen into the heart of the home.

Their extension is modern, using large glass doors to enhance the feeling of space and light. It was a natural fit for us to go for a sleek and minimal handleless design from our H-Line Collection. We incorporated many of our clever design features, one being our flight angled units which looks phenomenal as a statement piece. Kitchen islands are increasingly popular, especially in open plan living spaces, for this design I wanted the island to be the focal point of the room. By taking inspiration from a bar I’d visited in Cuba I designed an oval timber worktop, I love the contrast in textures and it definitely gives the room the wow factor. It’s such a special moment when you know you’ve created the perfect design for your customer, and I’m so glad the Bevans love the kitchen as much as I do. At Sigma 3 our customers are at the heart of every decision, so my advice would be to pop into one of our showrooms and let us help you create your dream kitchen.
Ingredients
Scallopini of Chicken Featured Recipe
• 1 medium carrot
Wild Garlic Salsa
• 1 stick celery
• 100g wild garlic
• ¼ fennel bulb or a teaspoon of fennel seeds
• 100g spinach
• 1 small onion
• 50g parsley
• Leek trimmings
• 3 sprigs of fennel or 1 of dill or tarragon
• 3 peppercorns & sea salt to taste
• 200ml olive oil
• 5 sprigs thyme, 5 sprigs parsley & 2 bay leaves
• 1 tablespoon pine nuts
• 6 Free-range chicken breasts, butterflied
• Sea salt, lemon and pepper to taste
Method 1. Finely slice up all the vegetables for the poaching stock and place in a large pan. Add the peppercorns, herbs and water. Season with salt. Place on your hob and bring to the boil, cook for 15 minutes then turn down the heat. Add the chicken and poach gently for 10 minutes then turn off the heat, cover and leave for 10 minutes.

Here’s the recipe for my Scallopini of Chicken with Wild Garlic. It has great flavour. Serve with Green Bean Salad with Caramelised Red Onion & Crushed Potatoes. This recipe serves six people.

Her clients include an esteemed list from European aristocracy to high profile clients such as, Lord Lloyd Webber. Angela opened the doors to her Cookery School at Llanerch Vineyard in April 2010. She is now in her sixth successful year and has already been voted into the Top 10 UK Cookery Schools by The Independent and The Telegraph.

2. Meanwhile make the wild garlic salsa. Bring a small saucepan of water to the boil and blanche the wild garlic, spinach and herbs for 30 seconds. Drain and refresh under cold water to set the colour. Place in a tall jug, add the olive oil, half the pine nuts and the olive oil. Use a stick blender to blitz the ingredients to a smooth sauce. Season with salt, pepper lemon juice and stir in the remaining pine nuts. 3. Drain the chicken and place on a plate, spoon some of the salsa over and serve the rest in a bowl at the table for people to help themselves. 4. Strain the poaching stock, cool and then refrigerate or freeze to use for a delicious simple homemade spring minestrone soup, you can finish it with some of the wild garlic salsa. 5. I like to garnish the plate with crisp slices of pancetta cooked on a baking sheet between 2 oiled sheets of parchment or foil and then another baking sheet on top.

Stuffed Pork Fillet
Ingredients
• Sea salt and pepper
• 1 Pork Fillet
• 15 prunes
• 1 medium onion, finely chopped
• 15 cooked chestnuts
• 1 tablespoon olive oil
• 225g cooked spinach
• 15g butter
• 6 slices cured ham, Proscuitto, St Danielle etc
• 150g pancetta or smoked bacon
• 150ml white wine
• 2 fat cloves garlic, pasted
• 1 tablespoon reach of redcurrant jelly and pomegranate molasses
• Fresh nutmeg
Featured Recipe
• 2 tablespoons crème fraiche
• 12 sage leaves • 1 heaped tablespoons breadcrumbs
Method 1. First prepare the stuffing, heat the olive oil and butter and add the onions and pancetta, cook until lightly golden. Add a little white wine to deglaze the meat residue in the pan. Stir in the garlic, nutmeg, sage and chestnuts. Season with salt and pepper. Remove from the heat and stir in the breadcrumbs. 2. Prepare the tenderloin by removing any sinew with a sharp knife. Cut almost right through and open out. Season the meat, lay the spinach on top and lightly season. Spoon the stuffing along the centre and pack down with your hands. Stud with the prunes.

This dish was well received at this month’s Lunch Club and by all the staff that day too! To prepare in advance, simply wrap the stuffed fillet in foil and refrigerate until ready to cook.

3. Next take a sheet of cling film and brush with olive oil. Lay the slices of Parma ham overlapping along the cling film, place the pork on top and use the edge of the cling film to roll up like a Swiss roll. Tuck the edges in. Weigh the fillet and cook at 18oc/170fan/gas4 for 15 minutes per 400g. Place in a lined baking tin, removing the cling film. Try to ensure the fillet is seal side down. Roast for the appropriate time, remove 5 minutes before cooking time is complete and brush with the redcurrant jelly and pomegranate molasses (mixed) then return to the oven. Remove from the oven, drain off the juices into a small saucepan, cover the meat and rest. Add the wine and boil rapidly to cook off the alcohol. Stir in the crème fraiche, whisk and reduce the heat. 4. When the meat has rested for 15 minutes, slice it into about 10-12 slices - add any juices that have escaped to the sauce. Serve with the creamed beans and some steamed shredded cabbage. Bon Appetite!

Sigma 3 Kitchens (formerly known as County Kitchens) were recommended to us by some friends who had a kitchen designed and installed by them. Our friends had worked with Ollie Willcox (kitchen designer) in their Guildford showroom, which is currently closed due to the redevelopment of the Tunsgate shopping centre, so Ollie is now working from their Esher showroom. I would have no hesitations whatsoever about recommending them, following the experience which we had. The whole team, particularly Ollie Willcox (kitchen designer), Ralph Buckley (Operations Manager), and Maciej [Magic] (kitchen installer) provided a service which was absolutely top class.
with Ollie before we signed a purchasing agreement, and he didn’t pressurise us into anything which we were not comfortable with. He provided excellent advice throughout the whole design process, and came up with lots of ideas to ensure that our kitchen was not only functional, but also that it looked very elegant.
Having a complete new kitchen installed is never going to be a cheap project, and you could certainly save yourself a bit of money by buying standard units from one of the well-known retailers. But for us, the price which we paid was justified by the outstanding support which we received for our custom kitchen design, and the smooth and seamless overall process. I did have an appointment with one of those well-known retailers before we started our project with Sigma 3, and the experience with that other retailer left me disappointed - they didn’t really make any suggestions at all, they just asked me where I wanted to put everything in their on-screen 3D model. By contrast, Ollie gave us lots of hints and suggestions which we would never have thought about ourselves, and included various custom parts in the design to ensure that everything fitted perfectly.
Once the design was finalised, the installation was all completed as planned, with everything arriving on time, and clear instructions provided for our plumber and electrician about where electrical points and plumbing needed to go. The coordination with a couple of their suppliers (for a quartz worktop and a glass splashback) was smooth and
