Super Sweet Potato Doughnut Holes + Apple Cider Glaze + Hot Spicy Cider

cook + cool Cook 1 small sweet potato, either by boiling, baking, or microwaving. Set aside to cool. • To boil, fill a saucepan with enough water to cover the sweet potato, bring to a boil and add the sweet potato. Cover and cook for 10-12 minutes or until just tender on the outside, but resistant in the center when pierced with a knife. • To bake, preheat oven to 400 degrees. Bake sweet potato for 45 minutes or more. When done, the outside of the potato will have darkened and the inside will be soft. • To microwave, prick the sweet potato all over with a fork and microwave on high for 8-10 minutes or until tender, turning the sweet potato once.

crack + separate + beat Have your kids crack 1 egg, separating the egg white from the yolk. Crack a second egg and discard the white but keep the yolk. Beat the egg white with a hand blender or whisk until they hold a stiff peak.

chop + measure + mix Have your kids chop the flesh of the sweet potato into tiny little bits. Have kids measure 2 cups allpurpose flour, 2 tsp baking powder, 1 tsp baking soda, ½ cup brown sugar or honey, 2 tsp pumpkin pie spice, ¼ tsp salt, 2 Tbs softened butter, and 3/4 cup milk, and add to reserved egg yolks. Mix until smooth, and then add ½ cup chopped sweet potato and mix further with hand blender. Let the dough rest. :: continued ::

 Preheat oven to 400 degrees and then fold reserved egg whites into dough.

oil + bake + drizzle Time to make doughnut holes! Put about 1 tsp vegetable oil in the bottom of each well in a mini-muffin pan. Heat the empty muffin pan in the oven until hot. Then carefully pour in about 1 Tbs of the batter into each cup. Pop into the oven and bake for about 6-8 minutes. As soon as the doughnut holes get bubbly and start to brown around the edge, pull the muffin tin out of the oven and turn the doughnut holes quickly and carefully (a chopstick works great!). Continue baking for 3-4 more minutes until cooked through. Sere with drizzle of apple cider glaze on top! YUM!

combine + whisk While the doughnut holes are cooling, have your kids combine 1 cup powdered sugar, 1 Tbs apple cider/juice, 1 pinch cinnamon, and 1 Tbs butter (softened). Whisk until smooth and drizzle over doughnuts before serving!

heat + add Heat 1 quart 100% apple cider/juice in a saucepan over medium heat. Add half of an apple and half of a small orange. Once heated, add ¼ cup brown sugar and stir to dissolve. Then add 1-2 cinnamon sticks*, 1-2 whole cloves*, ¼ tsp nutmeg*, ¼ tsp allspice* (*or sub 3/4 tsp pumpkin pie spice).

simmer + remove Bring to a simmer and let simmer for at least 5 minutes and up to 30 minutes. Before serving, remove the apple, orange, cinnamon sticks, and whole cloves from the pot. Serve hot!

Records show that the Dutch were making olykoeks, or “oil cakes”, as early as the mid 19th century. These early doughnuts were simply balls of cake fried until golden brown. Because the center of the cake did not cook as fast as the outside, the cakes were sometimes stuffed with fruit, nuts, or other fillings that did not require cooking. Hansen Gregory, an American ship captain, had another solution to the uncooked center of these early doughnuts. In 1847, he punched a hole in the center of the dough ball, increasing the surface area and exposure to the hot oil, and therefore eliminating the uncooked center. Doughnut holes are the small spheres that are made from the dough taken from the center of ring doughnuts, or made to look as if they are. Doughnut sellers saw the opportunity to market “holes” as a novelty.

Sweet potatoes, also known as yams, are a versatile vegetable used for both sweet and savory dishes throughout the world.



Only distantly related to the potato, sweet potatoes belong to the morning glory family, rather than the nightshade family. Unlike regular potatoes, sweet potatoes taper at their ends, coming to a point.



The skin of sweet potatoes is smooth and can be white, red, golden, or purple. The flesh inside of sweet potatoes can be white, yellow, or deep orange.



The taste and nutritional value of the sweet potato varies depending on the color of the flesh. Orangefleshed varieties are rich in beta carotene and vitamin C and tend to be sweeter because they have more sugar. White-fleshed varieties have a higher content of starchy carbohydrate.



Sweet potatoes were grown in Peru as early as 750 B.C. African slaves in the U.S. South called the sweet potato “nyami” because it reminded them of the starchy, edible tuber of that name that grew in Africa. The Senegalese word “nyami” was eventually shortened to the word “yam”.



Store sweet potatoes in a cool, dark place. Do not store in the refrigerator.
