Here’s what I know you’ve all been waiting for the most... TACO RECIPE. Who doesn’t love a good taco? This is sure to be a go to favorite as it is mine. I love me some yummy beef barbacoa in a corn tortilla cooked by a slow cooker to perfection! Here’s how you can make your own and win #TacoTuesday! Serves: 8 Ingredients • 4 lbs beef chuck roast • 2 Tbsp vegetable oil • 1 cup of beef broth • 2 tsp garlic powder • 2 tsp salt • 2 tsp pepper • 2 tsp onion pepper • 1 tsp cumin • 1/4 cup lime juice • 1 bunch fresh cilantro • Corn tortillas (white or yellow?...whatever gives you more joy...) • Feta cheese • Pico de gallo (small container from the local produce section of your grocery store PRE-made) 1. Cut the beef into large cubes. In a large skillet over medium high heat add the vegetable oil and sear the beef on each side. Transfer to your slow cooker. 2. In a medium bowl or measuring cup, mix together broth, garlic powder, onion powder, cumin, lime juice, finely chopped cilantro,salt, and pepper. Pour on top of the meat. 3. Cook on low for 8-9 hours or high for 5-6 hours. Shred the meat with two forks and turn on warm.
