The bouquet displays ripe forest fruits, spice and liquorice with a suggestion of toasty oak in the background.
Palate
The palate is full bodied offering juicy red fruits, dark plums and Indian spices with subtle mocha characters. The generous fruit, firm acid backbone and fine-grained tannins combine to produce a well-balanced wine with robust structure and warm lingering fruit finish.
Cellaring Potential
This vibrant Shiraz is ready to drink now or cellar for up to five years.
Vintage Conditions
The 2011 growing season was initially cool and dry through late winter and early spring, progressing to a warm and dry summer pattern with a minor rain event in January. During the harvest period the fine weather continued with most varieties being picked one to two weeks earlier than normal, with early flavour development allowing the retention of plenty of natural acidity. Yields for whites were slightly higher than the previous couple of seasons. The fine, warm conditions continued right through to the end of March allowing all red varieties to achieve good physiological ripeness and continuing the dream run of Margaret River vintages in recent years.
Fruit was sourced from mature vineyards in the Karridale, Yallingup and Wallcliffe subregions of Margaret River.
Winemaking
A ssignificant portion of the fruit was destemmed and then crushed with open rollers to introduce whole berries into the ferment which was carried out in a combination of static and rotary fermenters at 26oC for 5 – 7 days. Two components were co-fermented with a small portion of Viognier to add spice and a floral lift to the wine (sometimes we will use ‘wet’ Viognier skins only, after free-run Viognier has already been lightly pressed).The various batches underwent MLF in a combination of tank and oak before 14 months maturation in a selection of predominantly French oak barriques (15% new oak in total). A small component of Graciano (2%) from our Stevens Road vineyard was added to the final blend adding extra spice and complexity, prior to bottling
