Chocolate Pistachio Pudding Serves 4-6

Ingredients       

4 ripe bananas 8 Medjool dates, pitted 1 cup raw, unsalted pistachios, shelled and ground 2 Tbsp. raw cocoa powder 1/2 tsp. vanilla extract 1/4 tsp. almond extract 1/4 cup unsweetened coconut milk or water

Directions 1. Add all ingredients to a blender. Blend until a smooth consistency is reached. 2. Use a spatula to extract pudding from the blender and scoop into a glass bowl. Cover and chill in the refrigerator until ready to serve.

Tips  Grind shelled pistachios in a coffee or spice grinder. If you are using a powerful blender, you may be able to avoid grinding the pistachios and add them directly to the blender. Buy pistachios already shelled and unsalted.  Experiment with other types of raw, unsalted nuts such as macadamia or cashew.  Add in a small handful of raw unsweetened shredded coconut for additional flavor.  Feel free to replace coconut milk or water with organic cow's milk or other types of milk substitutes, if desired.  Serve with organic raspberries or strawberries and sprinkle with some additional crushed pistachios.
