The Guinness Story {from 1759 to the present) Congratulations on your decision to have· our artist capture your likeness with Guinness in hand. We hope you're pleased with the results. But if not, we suggest taking another sip. A/ter all, Guinness has the curious effect of improving one's outlook on most everything.
We thought we'd take this opportunity to tel/ you a bit about Guinness. Hardly one to blink in the [ace of adversity, Arthur Guinness founded his brewery in 1759 at a time when the economic climate was far from hospitable. Yet he was able to take over a small, i/J_ equipped brewery at St. James's Gate, Dublin, and make it prosper. In /act, Arthur was so confident in the brewery's future that he signed a 9,000-year lease. And today, some 237 years a/ter it
was introduced, Guinness is celebrated around the globe. By 1794, Guinness had become we//_ known outside Ireland, and London's The Gentleman's Magazine proclaimed "... peace and prosperity would come of drinking Guinness. Th.e virtues of the Irish stout were further extolled by a wounded officer in the Battle of Waterloo, who wrote: "When I was sufficiently recovered to be permitted to take nourishment, I felt the most extraordinary desire for a glass of Guinness ... I am confident that it contributed more than anything else to my recovery. 11

James Joyce referred to it as "the wine of the country and Robert Louis Stevenson is known to have brought his own supply of Guinness to the Samoan Islands. By 1909, Guinness had even reached the South Pole. 11
The Perfect Pint •A dry, clean pint glass is ideal. (Warm or iced glasses are to be avoided.) •As the Irish standard dictates, Guinness should be served chi/Jed at 39° to 45° F. • Each pint should be built with the legendary two-part pour and allowed to settle completely before drinking. It may take two to three minutes until it's ready to serve.

•Th.e perfect head is 3/4 high. It should be dense, white and creamy and rise just proud of the rim. Special care should also be given to prevent spillage over the side. • Th.e head should cling slightly to your upper lip (the famous Guinness moustache) as we// as leave rings on the side of the glass with each gulp. • Every perfect pint is well worth the wait.
The Mal~ing of the Perfect Pint You may be interested to know there are just /our ingredients used in the brewing of Guinness -- barley malt, so/t Dublin water, hops and yeast. In /act, the same natural ingredients first used by Arthur Guinness in 1759 are still in use today.
To begin, malt is roasted barley. It's this roastthat gives ing, incidentally, Guinness its unique deep black color. The mixture is then ground in mills, placed in large tanks and mashed with sprmg water tapped from Dublin's Wicklow Mountains. From this mixture comes a sweet liquid called "wort" (a lovely name indeed). The wort then travels to copper kettles, where hops, which lend Guinness its unique and distinctive taste, are added and the mixture is boiled /or several hours. Finally, liquid derived /ram the mixture is strained and pumped into /erm"!ntation tanks. Here the hopped wort 1s stored and the fourth and final ingredient -- yeast -- is added. The yeast feeds on the sugars in the hopped wort and produces alcohol and carbon dioxide gas.
This special strain of yeast is also responsible /or giving Guinness its distinctive creamy head. (If you're still following all of this, well done. By all means reward yourself with a hearty sip.) The yeast is then removed and the stout is allowed to mature and condition. When it is ready to be called Guinness, it is moved to the beer tank. shipped Lastly, it is packaged and worldwide. And that is how Guinness is created.
