The Mojito A traditional Cuban cocktail and supposedly a favourite drink of the writer Ernest Hemingway. A wild concoction of white rum, sugar, fresh lime, mint sprigs & club soda. The Negroni Possibly first created in Florence, Italy in 1919, at Caffè Casoni and named after Count Camillo Negroni. A stylish mix of gin, Campari, & sweet red vermouth. Cosmopolitan The Cosmopolitan was allegedly created in 1975 by Neal Murray at a steak house in Minneapolis called the Cork & Cleaver. A sexy mix of vodka, Cointreau, cranberry juice & lime. The John Cadman Named after the first Water Policeman on Sydney Harbour. A smooth blend of Kahlua, Baileys Irish cream, Frangelico Liqueur and cream. Midori Splice Its tranquil name hides a truly wild combination of Midori, Cointreau, Malibu, pineapple juice and a dash of cream shaken. Margarita Straight One story of its origin says Daniel Negrete created the cocktail in 1936. When Daniel's brother was due to be wed, Daniel presented the cocktail as a wedding present to his sister-in-law, Margarita. A frisky mix of tequila, Cointreau and lemon juice. Sydney Bay Breeze This is a more sophisticated version of those cocktails with names which can’t be advertised. Even still it’s guaranteed to create the mood with vodka, schnapps, pineapple and cranberry juice. Vodka Martini Bond’s favourite. Two parts vodka, one part dry Vermouth. Shaken of course. Sample menu only and subject to change. Not all items are available on all vessels.
