KOI Palace Restaurant A native of Hong Kong – after serving apprenticeship in Asia – Leung spent 4 years in Switzerland from 1989. In 1992, Leung became Executive Chef of Happy Valley Restaurant and Best Dim Sum and Seafood restaurant - KOI Palace. Chef Leung leads a kitchen staff of 30 and creates over 2000 dim sum items and exquisite seafood menus daily. Chef Leung has been an integral part of Koi Palace’s success along with owners Willy and Ronnie Ng. His favorite past time includes a stroll by the bay and appreciates simple things of life.
