The grapes were brought in and whole cluster pressed. The fruit settled for 1–2 days after pressing and racking to age in small lot stainless steel fermentation tanks. The temperatures dropped to 52–55 degrees and yeast was added. Fermentations lasted from five weeks to six months, depending upon the lot. Once complete, the wines were racked off the lees and individual lots were tasted to determine the overall blend of vineyards. We bottled this wine in spring of 2011 to capture the austere, bold and very varietal characters. TASTING NOTES — Chris Blanchard, MS I get a blast of lemon curd, apple, peach and pear in the nose, promising to deliver a fatter, richer style of Riesling. A faint hint of classic herbs and spring garden greens with delightful aromas of sweet tarts, tropical fruit and baked quince. The wine does indeed deliver more richness than lean fruit. It has apple, pear and peach fruit, with quince, guava and a hint of basil and chervil. The wine has a lush mouth feel with richness and acidity which lifts the ripe fruit flavors. A wonderful value and a delicious wine that has a long finish. This is a versatile wine that would work with grilled fish, sand dabs, roast chicken or pork tenderloin and mustard. Would probably be a fantastic wine with cheese too!
