2013 Shiraz Cabernet Vineyard Region: South Eastern Australia Vintage Conditions: Warm and dry conditions of Spring 2012 flowed into the Summer of 2013, this long dry spell coupled with above average temperatures allowed for a disease free growing season and fruit was delivered to the winery in pristine condition. Average yields were seen across most varieties. And the quality of the fruit produced was in general above average. Shiraz was particularly strong with resulting wines showing true varietal expression and solid colours. Colour: Vibrant red purple with crimson hues Aroma: Aromas of spice, black berry, plum and dark cherry are supported by sweet oak. Palate: Palate is soft and medium bodied, flavours of red cherry and forest berries with fine grain tannins. Vinification & Maturation: Shiraz was harvested in early March and was fermented on skins in automated stainless steel fermenters for a period of 5-6 days to allow for full colour and tannin extraction. The must was then pressed of and racked onto premium American oak to add richness during maturation and micro oxygenation The Cabernet was harvested in late March and was also fermented on skins for a period of 5 days with specially selected Cabernet specific yeasts. Once fermentation was complete the must was then pressed off on to premium French oak to enhance length. Once maturation was completed after approximately 9 months selected parcels of Shiraz and Cabernet were blend together to form this wine and a small amount of fining was done to balance this wine. Alcohol: 13.5% Peak Drinking: Now and up to 2 years with careful cellaring.
