Anna Thomas’ Green Soup with Wild Rice Courtesy of The Good Earth Natural Foods Co. Ingredients
1 pound green kale, chopped 12 ounces spinach, chopped 2 large onions 4 cloves garlic 2 ounces goat cheese ½ cup wild rice 8 cups vegetable stock 1 tablespoon lemon juice (optional) 1 tablespoon olive oil
Directions Follow the directions on the package for preparing wild rice. Using a small amount of olive oil, sauté the onions until they are nicely caramelized. Heat vegetable broth to a slow boil and add wild rice, onions, and greens. Reduce heat to a simmer. Add goat cheese and cayenne pepper. Blend in a tablespoon of lemon if desired.
