Baked Candied Salmon A verstaile marinade designed to suit practially all proteins including fish, tofu, chicken or beef!
INGREDIENTS MARINADE 1 tbsp 1 tbsp 1 clove 1 tsp
soy sauce maple syrup* garlic, finely grated** ginger, finely grated**
2 – 4oz ½ lb 4oz 2 tsp
salmon portions baby bok choy, halved and rinsed king mushrooms, sliced* sesame oil
*Can substitute with agave or honey. **A microplane zester is the perfect tool to finely grate garlic and gingerroot. **Experiment with other varieties of mushrooms including shiitake, maitake or oyster.
PROCEDURE Step 1 Preheat oven to 400oF and line a baking sheet with parchment paper. In small dish, mix the soy sauce, maple syrup, garlic and ginger. Reserve 1 tbsp of the marinade and set aside. Add the salmon and turn to coat. Let it sit for 15-20 minutes.

Step 2 Place bok choy and shiitake mushrooms onto baking tray. Drizzle with sesame oil and gently toss. Arrange the vegetables on half of the baking tray and make sure there is no overlap. Transfer the marinated salmon fillets onto the other half of the baking tray. Place in the oven and bake for 8-10 minutes or until salmon is golden and flakes easily with a fork. Serve over rice and drizzle the reserved marinade over the vegetables for extra flavour!
