Bruschetta Courtesy of Koinonia Farm Ingredients  1 tablespoon minced garlic (jar variety is fine)  3 tablespoons extra virgin olive oil  1/4 cup grated parmesan cheese (use a good quality, not the powdered kind)  2 1/2 cups minced Roma tomatoes  1/3 cup thinly sliced Koinonia Farm Organic basil leaf  2 tablespoons balsamic vinegar  1/2 teaspoon salt  1 teaspoon fresh ground pepper  Sliced baguette  Optional: add diced fresh mozzarella Directions Mix ingredients in a bowl and allow to sit at room temperature for at least 15 minutes. Adjust ingredients to the taste you want. Slice and toast your favorite baguette and top with bruschetta mixture and enjoy!
