Barbecue: With the warmer weather on the way many people enjoy eating outside and this includes barbecuing. Kayra’s dad, Sertac Saffett has shared some recipes for us to try at home. MARINADES FOR SKEWERED MEAT PIECES (soaking the meat overnight in the marinade is best - and if using wooden skewers, soak them in water before use.) For CHICKEN (for 4 chicken breasts, cubed) 4 tablespoons of olive oil 2-4 garlic cloves, crushed (or 1 blended onion and 1 teaspoon of ground cinnamon) the juice of half a lemon salt and pepper OR 4 tablespoons of olive oil 2 teaspoons of tomato puree For LAMB (1kg cubed) 2 onions, grated 4 crushed bay leaves 2 tablespoons of dried mint salt and pepper HALOUMI CHEESE This is great grilled. Cut into 6 thick pieces, grill both sides lightly, squeeze some lemon over it and eat straight away. MIXED SALAD 1 small lettuce or half a small white cabbage, shredded 3 firm tomatoes, diced half a cucumber, diced 1 small red onion, chopped a bunch of fresh parsley, chopped coarsely a few sprigs of fresh mint SALAD DRESSING 4 tablespoons of olive oil the juice of 1 lemon salt and pepper Mix together all the ingredients. Beat the oil and lemon together, season to taste. Just before serving, pour the dressing over the salad and mix well.
When barbecuing or grilling food, excess fats drip off meats and cooks away leaving less fat in the food. Vegetables retain more vitamins and minerals. The high heat from the grill seals in moisture and keeps food tender so there’s no need to add oil or butter in the cooking process and you’re less likely to add more sauces or other condiments – thereby reducing calories. Meats retain more riboflavin and thiamine which are essential vitamins.
