Chicken Fajitas Ingredients • 2-3 chicken breasts sliced into thick strips • 2-3 peppers, chopped into chunks • 1 large onion, cut into thick slices Marinade • 1 tablespoon olive oil • 1 clove garlic, minced • 1 jalapeño, finely minced or 1 tbsp sriracha • 1 tsp. cumin • 1 tsp. coriander • 1 tsp paprika • Juice 1 lime • ½ teaspoon salt • ¼ cup chopped cilantro (optional)
Making it 1. Place all ingredients for the marinade into a large bowl and whisk together. 2. Add the chopped chicken, stir thoroughly to make sure the chicken is coated and marinade in the fridge for at least 15 minutes. Marinating overnight will give the best flavor 3. Prepare the peppers and onion. 4. After 15 minutes, remove the chicken from the fridge. Cook the onion for 2-3 minutes over a medium heat. Add the chicken and cook for another 5 minutes. Then add the peppers. Allow to cook for a further 10 minutes until the chicken is thoroughly cooked and the peppers are cooked to your liking. 5. Serve with fajita or lettuce wraps, salsa, hot sauce, guacamole or low fat sour cream.
