Chicken Rice Divan Bake Ingredients: 2 cups frozen broccoli spears 1 cup grated low fat Cheddar cheese 2 cups chicken, cooked, cubed 1 cup cooked brown rice 2 tablespoons light, no salt butter 2 tablespoons flour 1 cup skim milk 1 tablespoon lemon juice 1 cup fat free sour cream Salt and pepper to taste Directions: 1. Wash hands and work space thoroughly. 2. Cook broccoli according to package directions; drain well. Arrange broccoli in 12x9x2-inch baking dish. 3. Sprinkle with half the cheese; top with cubed chicken. 4. Season with salt and pepper; spoon on the cooked rice. 5. In a saucepan, melt butter over low heat. 6. Blend in the flour; add milk. Cook, stirring constantly, over medium heat until mixture thickens and bubbles. 7. Remove from heat; stir in lemon juice and fold in the sour cream. 8. Pour over chicken. Sprinkle with remaining cheese. Bake at 4000 for 15 to 20 minutes.
