Eggs for Weekly and EOW subscribers. Ground beef and bacon. Pan Grilled Beef or Turkey Burgers: For EACH person, use one third pound of ground beef or turkey per person. Shape into a slightly oblong patty if to be served with on a plate or into a round patty if serving on a sandwich bun. Heat a heavy skillet, cast iron if you have it. Add olive or other type of oil to cover bottom of pan. Sear patties on each side until brown, sprinkle with garlic salt, cover, and cook to desired doneness. To stretch meat or add flavor, mix meat with any or all of shredded beets, finally chopped mushrooms, minced onions, or minced garlic. Make the patties thinner than you would otherwise so the beets and mushrooms cook. Ground beef can also be used in this recipe. Boiled Egg Sandwiches: For EACH sandwich, two slices toasted bread or toasted sandwich roll, 1 slice onion, mayo, sliced hardboiled eggs. Add arugula, thinly sliced peppers, cucumbers, tomatoes, or a greens. A bit of jalapeno peps it up. Add cheese if desired. You can used fried or scrambled eggs rather than boiled eggs.
